Description
"Cicerchia" are a variety of peas used to make the "Zuppa di Cicerchie" soup in Italy. They resemble chickpeas in appearance but have a rougher and more angular surface. They are a nutritious legume to add to dishes since they are particularly rich in B vitamins, phosphorus and calcium. They lend a hearty taste to salads, soups, dips, fillings or as a ragout and are perfect to bulk up light dishes. They are also ideal for figure-conscious gourmets because they are high in protein and low in fat.
Note: Peeled cicerchia peas do not have to be soaked before cooking - they can be cooked right away and require only a short cooking time.
